PREPARATION AND PRESENTATION OF WINE
Rosé wine Domaine les Grès is originated in the vineyard of 15ha located in the foothills of the Maures at the entrance of the Collobrières Village in the department of Var. The soil throughout the surrounding area rests mainly upon granite. The harvest takes place at maturity, produced 70% manually and at 30% by machine, in the early morning, to preserve grapes from the heat of the day and prevent the excessive oxidation of the berries. Such wines are prepared by pedicle cold maceration, racked, yeasted and fermented at controlled temperatures (around 16°C). The wine is then withdrawn, clarified and stored in full tanks. Domaine Les Grès vineyard is a part of appellation Côtes de Provence area, the largest Provence appellation. Its geographical area includes 84 municipalities of three Mediterranean departments: Var, Bouches-du-Rhone and Alpes-Maritimes (1 municipality). With a certain diversity of soils, the whole area is under the typical influence associated with the Mediterranean climate of Provence. The vineyard of AOP Côtes de Provence covers about 20,000 hectares, and it provides a majority of rose wines, produced mainly from Grenache, Cinsault, Carignan and Syrah. The “Maures” plain is situated halfway between the northern part of the appellation, where the vineyards are considered to be the freshest, and the coastal area, known as particularly hot. Located in so-called Permian depression, the vineyard enjoys a very favorable microclimate conductive to the production of delightful rosé wines. AOP Côtes de Provence wines are usually regarded as fresh and powerful at the same time.
