PREPARATION AND PRESENTATION OF WINE

The rose wine Domaine la Colombe is the result of traditional blend of appellation Coteaux Varois en Provence: Grenache and Cinsault, complemented by a touch of Cabernet Sauvignon. Located in the commune of Saint-Maximin-la-Sainte-Baume, the area covers approximatelly 30 hectares. The altitude of the vineyards varies somewhere between 360 and 420 meters above sea level. The soil is largely clay and limestone in the valleys. Most areas under cultivation are composed of bauxite, sand and marble especially in those areas adjacent to Sainte Victoire. Domaine la Colombe is a part of AOP Coteaux Varois en Provence wines, the newest of the Provence appellation. The appellation region counts 28 dynamic municipalities situated in the heart of the Var valley around Brignoles. Sprawling over 1600 hectares and benefiting from the mild climate associated with proximity to the Mediterranean sea, the vineyard of AOP Coteaux Varois en Provence produces approximately 100,000 hectoliters per year. The wines from this region are mainly produced by bleeding process of the grapes.
